These delicious meaty filled air fried zucchini lasagna boats will give you all the lasagna vibes with out all the added carbs but will taste amazing.

What are zucchini boats?
They are zucchini thats been sliced down the center and can be filled with all of your favorite toppings. Since zucchini is only about 3 net carbs it makes for an excellent low carb option.
How to make air fried zucchini lasagna boats:
- Start by slicing the zucchini in half lengthwise. With a small spoon you will want to scoop out the insides like the ones pictured below. Be sure to save the inside of the zucchini because we will be using it later in this recipe. The wider the zucchini the better because that will give you more room to fill them with your meat mixture.

- Once you have them all scooped out you will want to sprinkle them with Italian seasoning and then set to the side.
- In a hot skillet you will add in your ground Italian sausage and cook until no longer pink.
- Once the meat is almost done cooking you will add in your mushrooms, pepperoncins and the scooped out zucchini. Cook until the veggies are soft and the meat is fully cooked.
- Add in your pasta sauce and mix well. You will let this cook for just another few minutes so that it’s all nicely combined and heated through.
- You will now begin spooning the meat mixture into your zucchini boats.

- Once they are all filled you are going to smooth out about 1 tablespoon of ricotta cheese on top of the meat mixture.

- Now finish it off by sprinkling it with freshly shredded mozzarella cheese.
- Place it on your air fryer pan and air fry 400 degrees for about 6-8 minutes or until the zucchini is soft but not mushy and the cheese has fully melted and enjoy.

Can I bake them in my oven if I don’t have an air fryer?
Absolutely! I just prefer my air fryer because its quicker and it gives it a nice crispy top. If you want to bake in your oven you will prepare them the same way but bake them on a baking sheet 400 degrees for about 15 minutes or until the Zucchini is tender but not mushy. If you want a crispy top you could always broil it for the last minute or so.

Equipment
- Air fryer
Ingredients
- 1 lb Italian Ground Sausage
- 4-6 thick zucchinis
- 4 oz mushrooms
- 1/3 cup chopped pepperoncinis
- 1/2 cup ricotta cheese
- 1 cup low carb marinara sauce
- 1/2 cup freshly shredded mozarella cheese
- Italian Seasoning
Instructions
- Slice zucchini lengthwise and hollow out the insides. Sprinle with Italian seasoning and set to the side.
- Brown your ground Italian sausage until it's no longer pink.
- Add in your mushrooms, pepperoncinis and the scooped out zucchini pieces
- Once your veggies are soft add in your marinara sauce and mix until well combined.
- Top your meat mixture into your hollowed out zucchini slices
- Add a thin layer of ricotta cheese on top of the meat mixture
- Sprinkle with shredded mozarella cheese
- Place on air fryer tray and air fry at 400 degrees for 6-8 minutes or until the zucchini is soft but not mushy and the cheese is fully melted
- Top with grated parmesan cheese and enjoy.
