Garlic Ranch Beef Tips and Gravy makes for the perfect comfort food. It’s packed with flavor and is super simple to toss together. This would make for an easy weeknight dinner for the entire family.

INGREDIENTS NEEDED FOR GARLIC RANCH BEEF TIPS:
- Beef stew meat
- avocado oil
- sliced mushrooms
- butter
- beef broth
- minced garlic
- ranch seasoning
- xanthan gum
You will need and Instant pot for this recipe. This is a really great cooking device and helps you make meals quick and efficiently.

What is xanthan gum?
Xanthan gum is used as a good thickener in soups, sauces and in baking. If you are following a low carb diet this is a great thickening agent that is low carb and keto friendly. When using this just use a very small amount at a time. You can very quickly over do it and then your sauce or soup can get too thick or even get a gummy like texture.
HOW TO MAKE GARLIC RANCH BEEF TIPS:
- Start by turning the Instant pot to sauté.
- Add in your oil and beef and cook until the outside of the meat has just lightly browned but the meat inside is still pink.

- Add in the minced garlic, broth, ranch seasoning, butter and mushrooms and mix until full combined.

- Pressure cook on high for 10 minutes then do a natural release for 2 minutes then quick release.
- Remove the meat and mushrooms from the pot and set to the side.

- Turn the instant pot to sauté. Allow the liquid to come to a simmer.
- In a small bowl mix together 1 teaspoon of xanthan gum and 2 tablespoons of super hot water. Whisk it quickly until the mixture is nice and thick and smooth.
- Whisk the mixture into the pot with the liquid. You should start to see it thicken up. It will thicken even more once its cooled down. If the gravy is not to your desired thickness you can repeat this step. Be sure to slowly add in the xanthan gum because if you add too much it can get gummy.

- Return the meat and mushrooms to the pot and mix it in with the gravy.
- Serve and enjoy.

WHAT TO SERVE IT WITH?
If your goal is to stay low carb this pairs really well with cauliflower mashed potatoes. You could also serve it with a light side salad.
LEFTOVERS:
If you have leftovers just make sure it fully cools off before storing it in an airtight container in the fridge.

- Remove the meat and mushrooms from the liquid
- Turn the instant pot on saute and let the liquid come to a simmer
- In a small bowl mix together 1 teaspoon of xanthan gum and 2 tablespoons of super hot water. Whisk it quickly until the mixture is nice and thick and smooth.
- Whisk the mixture into the pot with the liquid. You should start to see it thicken up. It will thicken even more once its cooled down. If the gravy is not to your desired thickness you can repeat this step. Be sure to slowly add in the xanthan gum because if you add too much it can get gummy.
